Challenge week 1, Episode 1: Eggplant and polenta stack with avocado mash


Recipe:

Ingredients

1 cup of polenta
1 cup of breadcrumbs
2 pinches of salt

4 tbspns of soy milk
2 tspns egg replacer (mixed w) 4 tspns water
1 tbspn of flour
Pinch of salt

1 large eggplant

1-2 large hass avocados
1 red onion, finely diced
1-2 tspns wasabi
1 tspn minced garlic
1 tspn chilli powder
salt and pepper to taste
1 handful chopped coriander
olive or vegetable oil for frying

Egg replacer can be swapped with Linseed oil.

not sure i followed the filling. just chuck it all in a blender or what?

I just mashed it with a fork. But I *diced* the onion.

Basically just bash it with a fork until you can spread it like lumpy Jam.
